A delicious healthier dessert, great in small pieces after a meal. Quick and easy to prepare, lasts well in the fridge or freezer.



1 cup dates
½ cup walnuts
1 generous Tbsp rice malt syrup
1 generous Tbsp coconut oil



1. Blend the walnuts and dates, so that they remain with some chunks in them.
2. Melt the syrup and oil together in a saucepan, over medium heat, until it thickens as a toffee.
3. Add the blended dates and walnuts, stirring well.
4. Lay onto a tray covered in baking paper.
5. Set in freezer.
