A fantastic, healthy, scrambled egg substitute. Easy to prepare, great for cold winter mornings, but can be eaten at any time.
Ingredients:
1 block firm tofu
½ onion, finely chopped
½ cup sliced mushrooms
½ cup diced tomatoes
parsley
½ tsp tumeric
½ tsp basil
1 vegetarian stock cube
Method:
1. Sauté onion and add tomatoes and mushrooms
2. Add tofu (broken up with folk), then add remaining ingredients except parsley
3. Cook for 3 minutes
4. Garnish with chopped parsley
